Say Essex to food fans today, and their thoughts will more than likely turn to Wilkin's jam, Maldon sea salt, Colchester oysters or Copella apple juice.

of years ago by the monks of Colchester Abbey.

started more than 100 years ago. Now its jams and preserves are known worldwide, being served in the best hotels, by the best airlines, and on the best cruise liners. No other company makes

a jam made from tiny strawberries which has a huge following among connoisseurs.
Just ten miles away, in
Maldon,
the Maldon Crystal Salt Company carries on a trade known in the small seaport since Roman times. Its salt is milder than normal table salt, which is said to sit uncomfortably on the tongue and have an underlying bitterness.
Colchester Oyster Fishery 384141
still takes its prized oysters from the sea and river around
Mersea Island.
And north of Colchester, apple company Copella presses the fruit to make a first-class apple juice with a growing reputation.
